Risotto is a northern Italian dish made from rice, which is prepared in various ways. Almost all preparation methods involve sautéing medium-grain rice and shallots in fat and cooking them in stock until the dish is creamy, but the rice grains are still al dente, i.e. cooked through but no longer hard.
