Risi e bisi, or risibisi in Switzerland, literally means "rice and peas". The dish has a royal origin: it was prepared as a gift for the Doge of Venice on St Mark's Day, 25 April. Risi e bisi celebrates the simple flavours - rice and peas - and the season of spring. Because that's when green peas are harvested for the first time.
Bon appétit!
